Ingredients
- 350 gm pasta penne
- 1 tablespoon butter
- 5 cloves chopped garlic
- 1 kilograms blanched & peeled,chopped tomato
- 1 tablespoon tomato ketchup
- 5 leaves basil
- 1 teaspoon black pepper
- 1 tablespoon extra virgin olive oil
- 1 teaspoon thyme
- 2 chopped dry red chili
- 1 tablespoon white wine
- 1 teaspoon sugar
- salt as required
Instructions
- Prepare the sauceHeat oil in a pan, add butter and once it starts to foam, add garlic. Stir well. Add red chillies followed by thyme. Stir to mix well. Cook for a minute or two and then add white wine. Let it come to a boil.
- Tip in tomatoes and cook pastaNow, add tomatoes and stir to mix everything well. Let it come to a boil and then reduce the gas flame. Let it simmer for 15-20 mins. Stir occasionally. Meanwhile, cook the pasta by adding salt, pasta, and water to a pan. Cook for 10 mins or as directed in the packet. Drain the pasta and reserve the pasta water.
- Season your sauceOnce your tomato sauce is ready, season it with salt and pepper followed by tomato ketchup and basil leaves. Now, Cook for about 3-5 mins and then add sugar. Stir to combine everything well.
- Mix pasta and sauceAdd cooked pasta to the tomato sauce. Stir to mix everything well. make sure the pasta gets coated well with the sauce. Add 2 tbsp of pasta water. Now, cook it for about 2-3 mins and then switch off the gas flame.
- Your Tomato Pasta is readyYour Tomato Pasta is ready to be served. You can garnish it with some parmesan cheese if you want. Enjoy!
