CHICKEN MARSALA | THE BEST EASY LOW CARB KETO DINNER RECIPES

INGREDIENTS

4 small chicken breasts (or 2 large, cut in two)
½ teaspoon black pepper
1 teaspoon garlic powder
½ teaspoon salt
1 tbsp olive oil
2 tbsp butter
1 ½ cup cremini mushrooms, sliced
½ small shallot, minced 
3 tbsp Marsala cooking wine
2 garlic cloves, minced
½ cup chicken broth
½ cup heavy cream
½ tbsp chopped parsley

INSTRUCTIONS

  1. Season the chicken with salt, pepper and garlic powder
  2. Heat a large pan on medium heat with olive oil. Add chicken and cook for about 5-7 minutes on each side, or until golden brown. Don’t move them while cooking.
  3. Remove chicken, put on a plate, and set aside.
  4. In the same pan add mushrooms, shallot and butter. Cook for 1 minute, then add wine and chicken broth. Cook for 5-6 minutes, until the liquid has reduced in half.
  5. Add in the heavy cream and simmer for 2 more minutes. 
  6. Place the chicken back into the pan and cover with sauce. Serve with chopped parsley on top and enjoy.
