INGREDIENTS:
- 1 egg
- 2 cups Original Bisquick mix
- 1 1/4 cups mashed very ripe bananas (2 to 3 medium size bananas)
- 1/3 cup sugar
- 3 tablespoons vegetable oil
- 1/3 cup miniature semisweet chocolate chips
Instructions:
- Preheat oven to 400 degrees F. Grease the bottoms of 12 regular sized muffin cups or line with baking cups.
- In a medium bowl, beat the egg slightly with a fork or a whisk, just until the egg yolks and whites are blended. Stir in the remaining ingredients just until moistened.
- Pour batter evenly into the 12 muffin cups.
- Bake for about 15 minutes or until golden brown.
- Cool in the pan for about 5 minutes.
