Bisquick Chocolate Chip Muffins

INGREDIENTS:

  • 1 egg
  • 2 cups Original Bisquick mix
  • 1 1/4 cups mashed very ripe bananas (2 to 3 medium size bananas)
  • 1/3 cup sugar
  • 3 tablespoons vegetable oil
  • 1/3 cup miniature semisweet chocolate chips

Instructions:

  1. Preheat oven to 400 degrees F. Grease the bottoms of 12 regular sized muffin cups or line with baking cups.
  2. In a medium bowl, beat the egg slightly with a fork or a whisk, just until the egg yolks and whites are blended. Stir in the remaining ingredients just until moistened.
  3. Pour batter evenly into the 12 muffin cups.
  4. Bake for about 15 minutes or until golden brown.
  5. Cool in the pan for about 5 minutes.
  6. Serve and enjoy!
