BLT Sandwich

Ingredients

  • 4 slices thick bread about ½ inch thick
  • 2 tablespoons softened butter
  • 8 slices bacon
  • ripe tomatoes sliced into thick slices
  • 2-4 lettuce leaves
  • 4 tablespoons mayonnaise
  • salt and pepper

Instructions

  1. Preheat the oven to 400°F/200°C. Line a rimmed baking sheet with parchment paper or foil.
  2. Lay the bacon on the baking sheet in a single layer and bake for 20 minutes or until crispy. Transfer to a paper towel to soak up the excess grease.
  3. Butter both sides of each slice of bread, then place in a preheated frying pan over medium heat. Toast the bread on both sides until golden brown and crispy.
  4. Spread mayonnaise on each slice of bread. On two of the slices, add lettuce, then tomato slices, and then season with salt and pepper.
  5. Divide the bacon between the two sandwiches, then top each with the second slice of bread. Slice in half to serve.
