Ingredients
- 1 large English cucumber diced
- 2 medium tomatoes chopped
- 1 small red onion chopped (or yellow onion)
- 1 green chili finely chopped (optional)
- 2 tablespoons chopped fresh cilantro leaves
- 1 tablespoon chopped fresh mint
- 1 tablespoon lemon juice or vinegar or lime juice
- ¼ teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- In a bowl, combine the chopped cucumber, tomatoes, red onion, green chili, cilantro, and mint.
- Add the lemon juice or vinegar, cumin, salt and pepper.
- Toss well to combine, taste the salad and adjust seasonings to your preference.
- This salad is best served immediately but can be covered and chilled for up to 2 hours and then served.
